-Mexican Quinoa

Prep. Time: 25 Mins

What do you need?

-Large Size Covered Skillet

-Pre Rinsed Quinoa

-1 tablespoon olive oil
-2 cloves garlic, minced
-1 jalapeno, minced
-1 cup quinoa
-1 cup vegetable broth
-1 (15-ounce) can black beans, drained and rinsed
-1 (14.5 oz) can fire-roasted diced tomatoes
-1 cup corn kernels, frozen, canned or roasted
-1 teaspoon chilli powder
-1/2 teaspoon cumin
-Kosher salt and freshly ground black pepper, to taste
-1 avocado, halved, seeded, peeled and diced
-Juice of 1 lime
-2 tablespoons chopped fresh cilantro leaves


Warmth olive oil in an enormous skillet over medium-high warmth. Include garlic and jalapeno, and cook, mixing as often as possible, until fragrant, around 1 moment. 

Mix in quinoa, vegetable juices, beans, tomatoes, corn, stew powder and cumin; season with salt and pepper, to taste. Heat to the point of boiling; spread, lessen warmth and stew until quinoa is cooked through, around 20 minutes. Mix in avocado, lime juice and cilantro.

-Potato Salad

Prep Time: 30 mins

What do you need?

-5 potatoes

-3 eggs

-1 cup chopped celery

-1/2 cup chopped onion

-1/2 cup sweet pickle relish

-1/4 teaspoon garlic salt

-1/4 teaspoon celery salt

-1 tablespoon prepared mustard

-ground black pepper to taste

-1/4th cup Mayo

Heat a huge pot of salted water to the point of boiling. Include potatoes and cook until delicate yet firm, around 15 minutes. Channel, cool, strip and hack. 

Spot eggs in a pot and spread with cold water. Heat water to the point of boiling; spread, expel from the warmth and let eggs remain in high temp water for 10 to 12 minutes. Expel from boiling water, cool, strip and cleave. 

In an enormous bowl, join the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Combine well and refrigerate until chilled.

-Strawberry Oatmeal Breakfast Smoothie

What do you need?
-1 cup of soy milk

-1/2 cup rolled oats

-1 banana, broken into chunks

-14 frozen strawberries

-1/2 teaspoon vanilla extract

In a blender, combine all of the ingredients: soy milk, oats, banana and strawberries. Add vanilla and sugar if desired. Blend until smooth. Pour into glasses and serve with strawberries.
